<p style="text-align: left;">You&#8217;ll need the following items:</p>
<ul>
<li>2 eggs</li>
<li>1/2 tsp salt</li>
<li>1 cup milk</li>
<li>2 tbs melted unsalted butter</li>
<li>1 cup unbleached flower</li>
</ul>
<p>Preheat your oven to 425 degrees.  Melt your butter and butter a large muffin pan (makes 6 large muffins) or a small muffin pan (12 small muffins).  Beat the eggs and salt lightly.  Mix in milk and butter and then beat in flower.  Mix until smooth.  Fill each cup about half of the way full for the large cups and about 1/3 of the way full for the smaller ones.  Cook for 20 minutes and then reduce the temperature to 375 and cook until golden brown (about 15 minutes more).  Serve immediately because sometimes they tend to deflate.</p>
