    I had this delicious dish this winter at Tra Vigna in Napa Valley and would LOVE to recreate it! However, I can only guess at the ingredients although the menu said: sardinian cous cous, warm dates, toasted almond sauce, fresh thin sliced kumquats. I have forgotten what else was in it but from the picture on their site, it looks like there is cilantro on top and I can see the cinnamon on the plate and I remember now that it was in the dish as well. I believe there could also have been some peas in it but I can’t be sure. I was surprised the shoulder roast wasn’t tough. The meat was cut in round medallions.
